One of my favourite go to snacks is my Goji Berry Sesame Halva. I’ve always enjoyed little sweet treats, especially in the afternoon, and these bites are loaded with nutrients, protein and antioxidants to keep you going all day long. I actually have these on the menu for a new business, Gunnar Made Meal Prep, in Charleston, South Carolina, that I am part of.

Goji Berry Sesame Halva

Makes roughly 6 portions, at 6 balls per portion

Ingredients:

4 cups white sesame seeds
¼ cup goji berries
½ cup raw agave nectar
1 teaspoon pure (alcohol free) vanilla extract
½ cup whole sesame seeds for rolling

Method:

1. In a blender, blend 2 cups white sesame seeds at high speed until powder-like in consistency. Transfer to a large, deep bowl. Repeat for the 2 remaining cups of sesame.

2. In a food processor, process goji berries until powder-like in consistency.  Stir in with ground sesame. Add agave and vanilla and mix until well combined.

3. Using a small purple scoop, divide the mixture into equal portions. Cut each portion in half. Using your hands, roll each portion into a round ball. Roll in whole sesame seeds. Serve immediately or store refrigerated for up to 2 weeks.
