Tamales – Served most often at family celebrations, tamales are also sold from street stands after being hauled from whatever home prepared them. Waiting in a giant steaming steel pot, cornmeal dough and fillings are wrapped in corn husks and sold until they run out. The most popular versions are green (with chicken), red (with pork), or acelga ones, containing a leafy green vegetable like Swiss chard, along with cheese and often corn, peas or carrots.
